Simple Sundays: Chimichurri Chicken
Happy Father’s Day to all you dads! Let’s face it, dads rock. They make good puns and wear cool jeans. In need of a way to show your appreciation to your pops (or any other pops you know)? Try this amazing chimichurri chicken recipe. It’s hearty and spicy, and goes great with a cold Carrie’s Ginger Beer.
Here’s what you need:
1 shallot, chopped finely
3 cloves garlic, chopped finely
1/2 c parsley, chopped finely
1/2 c cilantro, chopped finely
1/2 tsp salt
3/4 tsp dried oregano
1/2 tsp chili flakes
1/2 c red wine vinegar
3/4 c olive oil
6 bone-in, skin-on chicken thighs
Here’s what you do:
Combine all sauce ingredients. Reserve 1/2 cup of sauce for serving, and pour the remaining sauce over chicken thighs. Marinate for at least 30 minutes and up to 8 hours.
When ready to cook: preheat oven to 400°F. Remove chicken from marinade and place on a rimmed baking sheet. Cook for 35-45 min, until skin is brown and crisped, and chicken reaches an internal temperature of 165°. Serve with roasted sweet potatoes and a green salad.
